Reading Terminal Market produce, Philadelphia
Recently, Brad and I have been neglecting one of our favorite hobbies: cooking! Ever since we both got so busy with work, coming home after normal-dinner-time most days, we have resorted to throwing something in the oven quickly and sitting down to chat over whatever requires the least energy to make!
This has been an okay so far; however, it's now getting colder outside, and the idea of coming in from the cold to sit down to a cold chicken salad sandwich isn't as appetizing! I want to be warm and full!
So my question is this: what's your favorite winter-y comfort food? If you have a second, leave a comment with the recipe, a link to the recipe, or just the name of the warm winter-y goodness! It doesn't have to be anything special, just something you love to throw together on a cold afternoon. I can't wait to have some new things to try...
I'll start it off. Here's an amazing recipe we made last night; it's delicious, easy (though it does take some time), and made enough for 4 meals!
What's your favorite?

when i am cold, i always crave hot soup. not sure if you guys are black bean soup fans, but this is SO GOOD and beyond easy (which would be a great option for those later nights): http://allrecipes.com/Recipe/Black-Bean-and-Salsa-Soup/Detail.aspx
Milla, that dish looks yummy!! One of my all time favorites is Chili..nothing special to it, just classic Chili! I do add a secret ingredient though---cinnamin and sugar, just a pinch of each, but it gives it a wonderful flavor.
1 green pepper
1 large onion
1 (28 oz.)can of whole tomatoes
1 (8 oz.) can of tomatoe sauce
1 lb. lean ground beef
1 tablespoon chili pepper (more if you like it on the hotter side)
1 and a half tsps. salt
*pinch of cinnamon and a pinch of sugar
Brown the ground beef, then throw in the green pepper, and onion and cook all together about 10 min. or until the pepper and onion are soft.
Pour the beef mixture into a large pot and add the remaining ingredients. Simmer for 90 min.
I love this recipe because it is so easy and ALWAYS good on a cold day~ We can eat on it for at least three dinners~ Enjoy!!!
Taco soup. Yum.
Ground Beef (browned and drained)
Bag of frozen corn
Can of Diced tomatoes
1 Can Kidney Beans
1 Can black Beans
1 Envelope Taco seasoning.
You could also throw in onions, or more corn, whatever you wanted. Mmm, that stuff is so good.
This is the latest new recipe that we have tried... and it was a hit! Not soup, but GOOD!
CRUNCHY COCONUT CHICKEN
1 c flaked coconut
13 vanilla wafers, crushed
2 1/2 pounds chicken
2 eggs, beaten
1/3 c butter, melted
On a plate, combine coconut and vanilla wafer crumbs. Dip chicken in egg, then coat with coconut mixture. Place in a shallow baking dish; drizzle with butter. Bake at 400 degrees for 1 hour or until done. 4-6 servings.
LOVE YOU!
